Fennel is one of those vegetables that until recently, I didn't really cook or eat that often. It seemed to me to be kind of precious, something unusual, not an everyday veggie like broccoli or green beans. At first the only thing I would do with it is slice it thin into a salad. (So good with Parmesan.) Then I discovered it. With some balsamic? Yum. And then I found out how good it was in a tomato sauce with seafood.

很幸运在2005年我进入了,香格里拉JADE ON 36餐厅,法国厨师长PAUL PAIRET 收留了我,他看我从北京跑到上海特意找他学习分子,就收我为徒,刚开始的时候每天特别艰苦,一天下来12个小时,一进厨房就开始忙碌,每样工作都很烦琐,但特别有趣,厨房的设备是我从没见过的,所有的原材料都是法国进口的,他的原则作出最好的食品,不计成本,所以每道菜都很惊人,他有自己的一道管理程序,必须照做,每天都在疯狂的操作着,感觉自己就像魔鬼一样,后来大家就叫它魔鬼训练营,他曾说过,从我这出去的员工可以到世界上任何餐厅工作都能跟上节奏,我就是世界上最好的餐厅,的确说的没错,从他那出来的员工基本都是厨师长,他管理很厉害,菜做的更特别,他作出的东西总能给任何人带来惊喜.他是一个天才,多家杂志评论他是"灶上毕加索".

The trick to quickly prepared meals is just a little foresight and planning. This poached salmon recipe is one of the first recipes my father taught me a few years ago. It's his favorite way to prepare salmon because not only can it be prepared in 10 minutes or less, but it doesn't stink up the house the way broiling or frying salmon can, and it tastes simply delicious.
